Protein Packed Gluten Free Banana Bread

So here I am, smack dab in the middle of my break. I can honestly say it’s incredibly strange to wake up without an alarm, take naps at any point in the day and spend however long I feel like in the kitchen.

It’s wonderful.

I feel like today is the first day I can truly enjoy it though. I have been battling illness for the past 10 days and have felt pretty punky (Kirby code for really, really bad). I literally laid in bed until 1 p.m. yesterday… if you know me, that’s extremely uncommon.

But I actually slept for the first time in almost two weeks last night and I’m feeling much (not totally) better. Which means that the first thing I did this morning besides make a breakfast shake was…. make banana bread!!!!

It rained all night long last night and is about 60 degrees… we haven’t turned our air on in a week and it feels so much like Autumn. I was planning on making pumpkin bread but realized that I had some bananas that were seriously spoiled and were calling out to be turned into bread.

So I gave them what they wanted and turned them into a delicious snack for me… you may be wondering why I added protein to it? I struggle so much with gluten free flour as I feel like I’m not getting the nutrition I would be if I were eating whole wheat. (I don’t know if that’s actually true that’s just my opinion) So I decided to add some protein powder to the mix and see how it faired.

Turns out… it was pretty stinkin’ delicious and I couldn’t even taste the added protein!

I used Pamela’s Mix recipe on the back of the bag and tweaked it a little. Here’s what I did:

  • 5 TBSP melted butter
  • 2 eggs, beaten
  • 1-3/4 cups Pamela’s GF Baking Mix
  • 1/2 tsp salt
  • 1/2 cup sugar (or honey)
  • 3 medium bananas, mashed
  • 1 tsp vanilla
  • 1/2 cup protein powder (adjust for taste)

Preheat oven to 350 degrees. Beat butter, sugar, eggs and bananas together. Add remaining ingredients and mix. Pour into loaf pan and bake 1 hour or until cooked in the center.

So easy and so delicious. Plus, my house now smells like baking bread. Bonus!

Also, you may have noticed the new NN face lift. I felt like it was time for something new and fresh. What do you think?? Should I keep it??
